My Favorite Piña Colada Recipe

Excuse the mess of our backyard! While it’s currently a work in progress, I’ve loved our most recent addition. Our new outdoor furniture finally arrived this weekend, giving me the perfect spot to relax and sip a frozen concoction. Since our nearly constant tropical weather, I’m always hunting for a new recipe, often experimenting in the kitchen. A piña colada is typically my number one choice when on vacation, and I decided to bring some of those flavors home. I have to say, I think I’ve truly outdone myself! If you want to jazz up your weekend, here’s a quick look at my favorite pińa colada recipe.
The Inspiration:
If someone is ever talking about the inspiration behind a piña colada recipe, then the story needs to begin in 1950s Puerto Rico. There are a few different competing claims on who made the very first. Whether you care to believe the Caribe Hamilton or Barrachina version, both include a healthy portion of white rum, pineapple, and coconut. I found further inspiration from a local St. Pete hotel, The Vinoy. On many sunny weekends, I’m at their poolside restaurant, Paul’s Landing. Their piña colada has a citrusy twist and is my favorite frozen concoction. While I don’t have an exact recipe, I did my best to recreate it for myself. I have to say, the results were very delicious!
The Ingredients:
Makes About 2-4 Servings
- 1 Cup Orange Juice
- Don’t skimp on quality for a truly delicious frozen drink!
- 2/3 Cup Frozen Pineapple
- We were back and forth between frozen pineapple and actual juice, so use what works best for you. They both work for this recipe!
- 2/3 Cup Coconut Rum
- Play around to find your favorite, but I highly recommend Don Q Coco.
- 1/4 Cup Coconut Cream
- If you want to mellow out a strong Coconut taste, consider using Coconut Milk or Water.
- Red Clay Spicy Margarita Salt
- This was a recent addition, but the perfect garnish to add a kick!
The Directions:
- Add the first four ingredients into a blender with two handfuls of ice and blend until smooth. Our Ninja BN801 Blender always gets the job done.
- To add a spicy kick, line your glass with Red Clay Spicy Margarita Salt. There are a few different techniques to accomplish this, but I used an orange slice along the rim and it worked out pretty well.
- Pour into your favorite cup or glass and find a spot to sit, kick back, and relax. This drink pairs perfectly with weekends, warm weather, or anything else on the horizon.
While my favorite way to enjoy this drink is frozen, I recently made it on the rocks. It was equally as tasty and more convenient if you don’t want to dirty your blender. Simply add the first four ingredients to your tried and true shaker to mix away!
Cheers to not being quite ready to let go of summer! Even though Fall is fast approaching, I may just have to keep sipping on this drink all year round. No matter the season you’re in, consider making my favorite piña colada recipe when you need a fruity and tropical pick-me-up! Chin chin!
